So strong was Warhol’s passion for Campbell’s tomato soup that it’s been said that he ate it for lunch every day for 20 years at the height of his fame. Ingredients:

2 tablespoons of olive oil

1 chopped onion

2 crushed garlic cloves

2 large tins of chopped tomatoes

240ml of vegetable or chicken stock or water

1 teaspoon of sugar

Salt and pepper to taste

60ml of cream

Fresh basil leaves, finely chopped.

Method:

  1. Heat the olive oil over a medium heat and cook the onion until translucent.
  2. Add the garlic and cook for a further 2 minutes.
  3. Pour in the tomatoes and stock or water, add the sugar, and season with salt and pepper.
  4. Bring to a boil, reduce the heat, and simmer for 15-20 minutes.
  5. Stir in the cream, taking care not to boil. Allow to cool slightly then blend everything together.
  6. Sprinkle with fresh basil and serve immediately.
