Ingredients
350g whole-wheat pasta
500g minced beef (any minced meat will work)
1 onion, peeled and diced
100g cheddar cheese, grated
1 can Campbell’s Cream of Tomato Soup
100ml milk
50g cherry tomatoes, halved
100g mushrooms, chopped
Optional: herbs and spices
Cooking Process
Step 1
Cook pasta in a large saucepan as instructed on the packaging, drain and set to the side. Then preheat the grill.
Step 2
This bit may get a little messy. In a large bowl, use your hands to grind together the minced beef with a splash of cooking oil and some seasoning of your choice. Then separate into small bite-sized meatballs and arrange evenly on a grill tray.
Step 3
Cook under the hot grill for approximately 10-15 minutes, occasionally turning until fully browned all over.
Step 4
While the meatballs are browning, add the milk and Campbell’s cream of tomato soup into a large saucepan over a low heat. Stir until the mixture is consistent.
Step 5
Pour some cooking oil into a small frying pan on a medium heat and fry the chopped onions for a minute or two.
Step 6
Then add the onion, tomatoes and mushrooms to the sauce, as well as a little more of your favourite herbs and spices. This is where you can get creative and experiment with whatever ingredients that interest you. Leave on the heat for 5-10 minutes
Step 7
Preheat the oven to 200°C (400°F), gas mark 6.
Step 8
In an ovenproof dish, pour the sauce over the cooked pasta before adding the meatballs. Then top with the grated cheese. Make sure you cover the whole dish so every bite is a little cheesy.
Step 9
Place in the oven and allow it to bake for approximately 30 minutes. Then dig in to your delicious meatball pasta bake and enjoy.
